Requirements

  • 2 years of experience managing/leading an hourly workforce
  • 2 years of food production experience (meat, poultry or seafood)
  • Experience with meat/fish cutting pertaining to portion control techniques and production processes

Responsibilities

  • Ensures meat/fish cutters are trained properly in maximizing cut yield for each part of the animal and all species; ensures cut yields are measured regularly and align with profitability matrix
  • Assigns work in the Production Room for same-day or future orders; organizes cutting tickets to ensure raw material is prepped and available for swift and timely completion; maximizes product flow through packaging
  • Ensures first in first out meat/fish rotation from the Cooler and Freezer for all species
  • Ensures the correct meat/fish is cut to customer specifications and pars are adhered to and met
  • Works with buyers to ensure adequate inventory to meet production needs and helps forecast future needs
  • "Sets up" 2nd shift, if applicable, for seamless shift transition according to known daily customer requirements through close communication with 2nd shift Supervisor
  • Works with Sales and Purchasing to plan future order production and inventory requirements
  • Works with Food Safety & Quality Assurance to maintain good manufacturing practices, meet HACCP and OSHA requirements, and maintain all USDA standards
  • Actively participates in accident or injury incidents, including near misses
  • Supports strategic business needs within the plant to drive operations knowledge and improvements
  • Provides food safety training and/or resources to ensure employees know how to handle food safely and attends trainings
  • Complies with food safety practices and all applicable SQF requirements
  • Ensures employees are informed and held accountable for their food safety and regulatory responsibilities
  • Ensures employees are positively encouraged and required to notify management about actual or potential food safety issues
  • Supports continuous improvement efforts
  • Performs other miscellaneous duties as assigned
  • Provides direct supervision for Meat/Fish Cutters or Production associates
