Responsibilities

  • Cooperate with Unit Supervisors to create and implement daily food preparation, set-up, service, and break down
  • Communicate with other departments during event location planning
  • Supervise and delegate responsibilities to food service staff during Unit Supervisor’s absence
  • Work with Director of Food & Beverage on planning, directing, controlling, and coordinating food service operations (personnel, pricing, purchasing, inventory, food/beverage production, presentation, monetary collection)
  • Manage daily operations of the restaurant and establishments preparing/serving meals and beverages
  • Plan, organize, staff, and direct all phases of food operations consistent with goals, policies, and procedures
  • Coordinate activities among kitchen, dining room, and banquet services
  • Ensure guest satisfaction with dining experience and resolve complaints about food quality or service
  • Oversee inventory, ordering of food, equipment, supplies, and routine maintenance of restaurant/equipment/facilities
  • Handle recruiting, monitoring performance, training, hiring, firing, and retaining employees
  • Supervise routine food service operations and assist executive chefs with menu selection (cost-effectiveness, popularity, trends, quality)
  • Analyze recipes for food, overhead, labor, and costs
  • Coordinate services such as waste removal and pest control
  • Receive deliveries, check against orders, and inspect food quality
  • Meet with supply company representatives
  • Ensure food and service meet standards; oversee training and explain policies
  • Schedule work hours and establish daily food production/labor goals based on business fluctuations
  • Help with cooking, clearing, or other tasks as necessary
  • Ensure dinners are served properly and timely
  • Monitor kitchen orders to prevent backups
  • Direct cleaning of dining areas and kitchen
