Availability to work a flexible schedule including weekends

Ability to work within a kitchen production environment and use commercial kitchen equipment

Responsibilities

Making fresh Mozzarella according to Eataly’s authentic Italian recipe
Utilizing fresh mozzarella curd to heat, stretch by hand, and make housemade mozzarella and other pasta filata offerings fresh daily
Engaging all senses to maintain and elevate quality of each batch
Recording daily the weight of ingredients used, batch sizes, and amounts transferred to other outlets
Making variations in time cycles and ingredients used as necessary for succeeding batches
Cares for and handles products with careful attention to quality control and waste management
Weighing, packaging and labeling mozzarella lab offerings
Stocks display refrigerators neatly, accurately and in a timely manner
Provides guest service and information on mozzarella-making process to guests
Cleans work station thoroughly following food safety best practices
Ensures collateral supplies are in stock and being utilized properly in the lab
Performs other duties as required or assigned
