Requirements

Prepare from scratch a variety of menu items for cafeteria and catering services, including soups, roasts, casseroles, sauces, vegetables, salads, sandwiches, and bakery items (30%)
Use scratch cooking and baking techniques such as demonstration cooking, roasting, sautéing, grilling, steaming, proofing, and baking
Participate in researching and testing menu items to improve quality and wellness, using healthy and flavor-enhancing herbs, spices, and cooking techniques
Bake fresh products using raw dough, mixes, and some scratch baking, ensuring proper proofing and baking methods for fresh breads and other bakery items
Practice safe food handling techniques as outlined in food safety standards (25%)
Practice safe ergonomic and personal safety techniques, including proper use of personal protective equipment (PPE) and body mechanics
Maintain a clean, organized, and safe work area, including walk-in coolers, food preparation areas, and stock areas; perform sanitation tasks like sweeping, washing, and polishing
Maintain accurate labeling, date marking, time, and temperature records to ensure freshness and minimize food safety risks
Operate and clean equipment following safety guidelines and using PPE
Support menu management by following recipes, providing feedback for improvements, following ordering processes, ensuring correct portions, monitoring records (HACCP logs, usage reports), inventorying storage areas, assessing leftovers, and projecting ordering needs (20%)
Deliver on Restaurant Hospitality standards by communicating with customers and servers, providing menu and preparation information, responding to questions/concerns with immediate resolution, and maintaining professional conduct (15%)
In the absence of the Chef Team Leader, cover responsibilities for food preparation, ordering, and service; adjust work location, tasks, or assignments to meet business needs (10%)

Responsibilities

Working under the Chef Team Leader and Restaurant Manager, prepare food from scratch for cafeteria and catering services using specified cooking/baking techniques
Improve the quality/healthfulness of foods by researching and testing menu items that fit a wellness profile
Put safety first by observing safe food handling, ergonomic, and personal safety techniques; maintain a clean, organized, and safe work area; operate and clean equipment per safety guidelines
Work as part of a team supporting menu planning/management
Communicate effectively with customers and servers regarding menu, food preparation, etc
