  • Ability to work within a kitchen production environment and use commercial kitchen equipment

Responsibilities

  • Make fresh Mozzarella according to Eataly’s authentic Italian recipe
  • Utilize fresh mozzarella curd to heat, stretch by hand, and make housemade mozzarella and other pasta filata offerings fresh daily, according to Eataly recipes
  • Engage all senses: tastes, smells, feels, listens and observes all characteristics of each batch to maintain and elevate quality
  • Record daily the weight of ingredients used, batch sizes, and amounts transferred to other outlets
  • Make variations in time cycles and ingredients used as necessary for succeeding batches
  • Care for and handle products with careful attention to quality control and waste management
  • Weigh, package and label mozzarella lab offerings
  • Stock display refrigerators neatly, accurately and in a timely manner
  • Provide guest service and information on mozzarella-making process to guests
  • Clean work station thoroughly following food safety best practices
  • Ensure collateral supplies are in stock and being utilized properly in the lab
  • Perform other duties as required or assigned
