Ability to work within a kitchen production environment and use commercial kitchen equipment

Responsibilities

Make fresh Mozzarella according to Eataly’s authentic Italian recipe
Utilize fresh mozzarella curd to heat, stretch by hand, and make housemade mozzarella and other pasta filata offerings fresh daily, according to Eataly recipes
Engage all senses: tastes, smells, feels, listens and observes all characteristics of each batch to maintain and elevate quality
Record daily the weight of ingredients used, batch sizes, and amounts transferred to other outlets
Make variations in time cycles and ingredients used as necessary for succeeding batches
Care for and handle products with careful attention to quality control and waste management
Weigh, package and label mozzarella lab offerings
Stock display refrigerators neatly, accurately and in a timely manner
Provide guest service and information on mozzarella-making process to guests
Clean work station thoroughly following food safety best practices
Ensure collateral supplies are in stock and being utilized properly in the lab
Perform other duties as required or assigned
