Responsibilities

  • Supervise agave entry, registration, and traceability until it becomes finished product (tequila)
  • Supervise the tequila production process
  • Release liquid for packaging, generate reports and metric records with chemical parameters
  • Communicate failures during the process and deliver possible solutions
  • Use gas chromatograph to generate reports within liquid parameters
  • Generate new projects, develop new liquids, seek suppliers
  • Quality control processes for liquids, productivity, savings, opportunities. Support and development of dry goods quality control metrics
  • Control inventories of liquids from raw material to finished product
  • Analyze process liquids completely: arrival, blends, barrels, sensory, finished product
  • Direct contact with CRT to maintain homogeneity and regulatory compliance
  • Monitor documentation and assay reports for 100% agave Tequila in bulk, evaluate compliance with physicochemical parameters according to NOM-006-SCFI-2012
  • Responsible for laboratory analysis, equipment, and measurement materials. In charge of calibration and operation of gas chromatograph for analysis of higher alcohols, aldehydes, esters, methanol, and furfural according to NMX-V-005-NORMEX-2018, NMX-V-004-2016; dry extract NMX-V-017-NORMEX-2018, and alcohol content NMX-V-013-Normex-2019, as well as other relevant analyses for quality control and specification establishment of Tequila and alcoholic beverages
  • Evaluate physicochemical parameter behavior of Tequila throughout the production process, blends, maturation, barrel unloading, and finished product. Traceability of maturation batches and finished product batches
  • Evaluate bulk liquid suppliers, audits of processes and documentation of technical production parameters for Tequila
  • Sensory analysis of raw materials, 100% agave Tequila, alcoholic beverages, and RTD cocktails; release of finished product batches; responsible for sensory panel and training through triangle tests, descriptive tests, and difference magnitude tests for supplier evaluation, formulation changes, and maintenance of product profiles over time. Responsible for formulation tests
